Is Salmon Skin Safe to Eat?

Last month I was out for dinner with a group of friends, and the waiter set down these gorgeous seared salmon fillets. Everyone dug in. And one by one, they all peeled off the crispy skin and pushed it to the edge of the plate like it had personally offended them. I was the only one at the table who ate it.

That got me a few raised eyebrows and one honest question: is that actually good for you, or just kind of gross?

So let me settle it. You can eat salmon skin, and for most people it’s a smart bite rather than a weird one. There are a couple of caveats worth knowing before you commit, but the short version is that the skin is safe and genuinely worth keeping.
